A very, very old fashioned drink, something akin to a Manhattan. Tanqueray gin, sweet and dry vermouths, triple sec, a little orange juice and orange bitters make this a surprisingly well balanced and finished drink – strong, but not overpowering, not too sweet or sharp.
Limoncello, Absolut citron and sugar syrup are finished off with egg white and crumbled meringue.
A large measure of Hennessy shaken with Cointreau, lemon juice and mineral water. A potent yet surprisingly well balanced little drink.
The ultimate after-dinner drink! A great pick-me up, Absolut Blue Label is shaken with Kahlua, a dash of brown sugar syrup and a double espresso.
Easily one of our most popular martinis, simply a double measure of Absolut Blue Label shaken vigorously with Chambord and fresh pineapple juice. Very fruity, smooth and refreshing.
Absolut Blackberry, Crème de Cassis and Chambord are shaken over ice with fresh lemon juice, raspberries and blackberries and a pinch of sea salt, finished with a mint sprig and a dash of black pepper. A wonderfully savoury and very different drink.
A really different take on a Margarita, this one has real bite! We bring a bottle of Silver Tequila down to freezing, mix up loads of fresh lime, mineral water, sea salt and Cointreau, serve it over cracked ice, finishing off by floating your ice-cold tequila on top.
A double measure of Absolut Vanilla, muddled through crushed ice with lemon juice, sugar syrup and lemon and vanilla bitters.
Our strongest, most terrifying invention to date! First, we flame your glass with absinthe, then we shake tequila, blue curacao, lime juice and sea salt, pour it all in, add a splash of grenadine in remembrance of the fallen (off their chairs). A heck of a bite, but a really fun drink!
Southern Comfort, Peach Liqueur and fresh orange, shaken with orange bitters and brown sugar syrup. A very different and wonderfully balanced take on a Sours.
Your spirit of choice, shaken with freshly squeezed lemon juice, brown sugar and egg white with a splash of angostura bitters. For the uninitiated, we recommend either a Dissarono Sour, or a Whiskey sour with Bulleit bourbon.

Zombie Classic – four rums, lime and lemon juice, orgeat, pineapple and grapefruit with an overproof rum flame.
Absolut Blackberry, Chambord and Dissarono are shaken over ice with lemon juice, fresh raspberries and blackberries, topped with soda and a splash of crème de cassis to make this wonderfully coloured and surprisingly smooth cocktail.
A double measure of Bulliet Bourbon is muddled with honey, a pinch of cinnamon, shredded root ginger and mint, then finished with spiced ginger beer. A wonderfully clean, refreshing drink with a real fire to the aftertaste.
An old favourite brought up to date for a new year, Zubrowka bison grass vodka is shaken with lime juice, pressed apple juice and a splash of angostura bitters, finished by flaming a light sprinkle of cinnamon on top.

Sparkling & Champagne
This full-flavoured, dry sparkling rose is made according to the traditional Methode Cap Classique whereby the delicate, lively bubbles are created during secondary fermentation in the bottle. Careful blending by Simonsig’s experienced winemaker lends elegance and class to this rose with it’s fragrant berry fruitless and striking finesse on the palate.
Delicate straw yellow & fine persistent mousse. Intensely fruity aroma with clear tinges of ripe golden apple followed by a pleasant and elegant floral sensation reminiscent of acacia flowers. Coming from the renowned Valdobbiadene sub region this is DOCG Prosecco at it’s finest with a complex and harmonious finish.
This Champagne presents a fine balance between fruity aromas and more subtle toasty notes. Initial flavours of white fruits and raisins develop into notes to brioche and vanilla with bottle ageing.
With its bright colour and youthful green tinge this wine flaunts delicious tropical fruit flavours with hints of green fig. Complex layers of fresh, crisp fruit play on the palate with zesty acidity contributing to a well-balanced and enjoyable Sauvignon Blanc.

La Salette is a perfumed, fresh, light bodied white displaying hints of Thai lemongrass, grapefruit and other assorted citrus. A triumph in wine-making and without question the greatest example of Colombard grape to be found anywhere.
Light straw in colour, this wine displays an enticing nose of peach, citrus and lemon aromas. Tropical fruit flavours and luscious mouth feel complement each other to deliver a deliciously rounded wine.
Pale lemon in colour, this wine displays a powerful bouquet of citrus blossom, lime and grapefruit aromas. Green apple, pear and tropical fruits help to give balance to the wine’s crisp crunchy acidity.
This zesty Sauvignon Blanc has fresh aromas reminiscent of lemons, gooseberries as well as those of tropical fruits. In the mouth, the wine shows a crisp ripe acidity and good persistence of flavour on the finish.

An attractive, bright ruby red Merlot with red fruit aromas.
This wine has an attractive light red colour, It has intense aromas of cherry and cassis. The oak is perfectly integrated and on the palate it is gentle with superbly balanced acidity.
Colourful and lightly perfumed with big juicy blackberry flavours and overtones of plum and black cherry.
This wine is full of expressive Gamay characteristics with elegant violet, irish and red fruit aromas and a palate bursting with velvety tannins. A feminine wine with a long finish.
Bright, Purple colour with aromas of fresh, red and black fruit, liquorice and vanilla notes. Dark fruit in the mouth which is intense and long, but also finishes with fresh acidity.
This wine has a vibrant ruby colour and a youthful expression of red berries and luscious cherries, with the attractive sweet notes of chocolate and cinnamon spice. Smooth integrated tannins polish the palate, whilst the dry finish captures the lingering notes of these vibrant fruits.
Opaque and inky red in colour, this wine displays a nice of smoky rich fruits with a touch of mint. Smooth and rich with spicy flavours of luscious dark berry, balanced tannins and a tremendously concentrated finish.
Bright ruby. Fresh red berries and cherry pit on the fruit-dominated nose and in the mouth. Smooth and appealingly sweet, offering straightforward fruity appeal and a touch of dark chocolate on the gently tannic finish.
